Peach Cobbler
Ingredients
  1. ½ c unsalted butter, melted
  2. 1 c all purpose flour
  3. 2 c sugar
  4. 3 tsp baking powder
  5. Pinch of salt
  6. 1 c milk
  7. 4 peeled, pitted and thinly sliced fresh peaches (or use two 29 oz. cans of peaches. Be sure to drain the juice from the peaches.)
  8. 1 tbsp fresh lemon juice
  9. Several dashes of ground cinnamon and ground nutmeg (to taste)

Instructions
  1. Preheat oven to 350 F.
  2. Pour melted butter into a 13 x 9 inch baking dish.
  3. In a medium bowl, combine flour, 1 cup sugar, baking powder, and salt. Mix well.
  4. Stir in milk, mixing until well combined.
  5. Pour this batter over the butter, but do not stir them together.
  6. In a medium sauce pan, combine the peaches, lemon juice, cinnamon, nutmeg, and remaining cup of sugar and bring them to a boil over high heat, stirring constantly.
  7. Pour the peaches over the batter, but do not stir them together.
  8. Bake in the preheated oven for 40 – 50 minutes or until the top is golden brown. Serve warm or cold.
